Roasted Cauliflower & Chickpeas

I had the opportunity to work with Pharmacy in Your Kitchen who developed this versatile dressing/marinade to share with you using my delicious A Taste of Mediterranean Herbs mix. She used it as a marinade for a head of cauliflower cut into steaks and a can of chickpeas drained, roasted them at 450F/230C until golden brown. Add in a cup of fresh English peas, that also had been marinating and roasted for a few extra minutes and served it over a plate of mixed greens.
FRANCESCA’S HERB DRESSING/MARINADE
75ml / 1/4 cup extra virgin olive oil
30ml / 2tbsp white wine vinegar
30ml / 2tbsp fresh lemon juice
20ml / 1 1/2tbsp Francesca’s Herb Blend
5ml / 1tsp maple syrup
5ml / 1tsp Dijon mustard
pinch of sea salt
5ml / 1tsp nutritional yeast (optional)
In a mason jar, combine all ingredients and shake well. Enjoy!
